Yield: 4 Servings
|1 tablespoon||Olive oil|
|1 each||Clove gresh garlic, minced, or 1 tsp bottled minced garlic|
|1 tablespoon||Finely minced chives|
|1 small||Onion, chopped|
|\N \N||Freshly ground pepper to taste|
|1 tablespoon||Minced cilantro|
|3 tablespoons||Tomato sauce|
|¼ teaspoon||Red pepper|
Preheat oven to 350F. Heat oil in wok or large skillet. Add garlic, chives and onion. Saute 2 minutes. Add salt and pepper, cilantro, tomato sauce and red pepper. Stir until well mixed. Remove from heat. In a separate bowl, beat eggs slightly. Pour sauce in with eggs, and stir until blended. Pour equal portions into individual greased custard cups. Bake in oven for 20-25 minutes or until set.
