Measure | Ingredient |

1 tablespoon | Olive oil |
1 each | Clove gresh garlic, minced, or 1 tsp bottled minced garlic |
1 tablespoon | Finely minced chives |
1 small | Onion, chopped |
¼ teaspoon | Salt |

1 tablespoon | Minced cilantro |
3 tablespoons | Tomato sauce |
¼ teaspoon | Red pepper |
4 larges | Eggs |
Preheat oven to 350F. Heat oil in wok or large skillet. Add garlic, chives and onion. Saute 2 minutes. Add salt and pepper, cilantro, tomato sauce and red pepper. Stir until well mixed. Remove from heat. In a separate bowl, beat eggs slightly. Pour sauce in with eggs, and stir until blended. Pour equal portions into individual greased custard cups. Bake in oven for 20-25 minutes or until set.
