Timbale eggs

Yield: 4 Servings

Measure Ingredient
1 tablespoon Olive oil
1 each Clove gresh garlic, minced, or 1 tsp bottled minced garlic
1 tablespoon Finely minced chives
1 small Onion, chopped
¼ teaspoon Salt
\N \N Freshly ground pepper to taste
1 tablespoon Minced cilantro
3 tablespoons Tomato sauce
¼ teaspoon Red pepper
4 larges Eggs

Preheat oven to 350F. Heat oil in wok or large skillet. Add garlic, chives and onion. Saute 2 minutes. Add salt and pepper, cilantro, tomato sauce and red pepper. Stir until well mixed. Remove from heat. In a separate bowl, beat eggs slightly. Pour sauce in with eggs, and stir until blended. Pour equal portions into individual greased custard cups. Bake in oven for 20-25 minutes or until set.
