Timbale eggs

Ingredients

| 1 | tablespoon | Olive oil |
| 1 | each | Clove gresh garlic, minced, or 1 tsp bottled minced garlic |
| 1 | tablespoon | Finely minced chives |
| 1 | small | Onion, chopped |
| ¼ | teaspoon | Salt |
| Freshly ground pepper to taste | ||
| 1 | tablespoon | Minced cilantro |
| 3 | tablespoons | Tomato sauce |
| ¼ | teaspoon | Red pepper |
| 4 | larges | Eggs |
Directions
Preheat oven to 350F. Heat oil in wok or large skillet. Add garlic, chives and onion. Saute 2 minutes. Add salt and pepper, cilantro, tomato sauce and red pepper. Stir until well mixed. Remove from heat. In a separate bowl, beat eggs slightly. Pour sauce in with eggs, and stir until blended. Pour equal portions into individual greased custard cups. Bake in oven for 20-25 minutes or until set.
