|¼ cup||Italian Dressing|
|1 tablespoon||Soy sauce|
|1½ teaspoon||Grated ginger root|
|¼ teaspoon||Crushed red pepper|
|¼ cup||Real coconut milk|
|8 cups||Mixed salad greens|
|1 cup||Chinese cabbage|
|1½ cup||Coarsely chopped chicken; (8 ounces)|
|1 cup||Shredded carrots|
|¼ cup||Fresh cilantro leaves|
To make Thai salad dressing:
Place Italian dressing in a bowl. Add soy sauce, grated ginger root and crushed red peppers and coconut milk and mix together.
In a large bowl, add salad greens, Chinese cabbage, chicken, shredded carrots and cilantro leaves. Pour salad dressing on top of mixture and toss to coat.
Place salad greens on plates and place avocado slices on top, if so desired.
