Thai cobb salad

Measure Ingredient
¼ cup Italian Dressing
1 tablespoon Soy sauce
1½ teaspoon Grated ginger root
¼ teaspoon Crushed red pepper
¼ cup Real coconut milk
8 cups Mixed salad greens
1 cup Chinese cabbage
1½ cup Coarsely chopped chicken; (8 ounces)
1 cup Shredded carrots
¼ cup Fresh cilantro leaves
1 Avocado; (sliced)

To make Thai salad dressing:

Place Italian dressing in a bowl. Add soy sauce, grated ginger root and crushed red peppers and coconut milk and mix together.

In a large bowl, add salad greens, Chinese cabbage, chicken, shredded carrots and cilantro leaves. Pour salad dressing on top of mixture and toss to coat.

Place salad greens on plates and place avocado slices on top, if so desired.
