¼teaspoonCrushed red pepper
¼cupReal coconut milk
8cupsMixed salad greens
1cupChinese cabbage
cupCoarsely chopped chicken; (8 ounces)
1cupShredded carrots
¼cupFresh cilantro leaves
1Avocado; (sliced)

Directions

To make Thai salad dressing:

Place Italian dressing in a bowl. Add soy sauce, grated ginger root and crushed red peppers and coconut milk and mix together.

In a large bowl, add salad greens, Chinese cabbage, chicken, shredded carrots and cilantro leaves. Pour salad dressing on top of mixture and toss to coat.

Place salad greens on plates and place avocado slices on top, if so desired.
