Tamaras curried chicken salad

1Red capsicum; finely sliced
2tablespoonsShredded coconut
3tablespoonsSultanas
3tablespoonsMayonnaise
3tablespoonsCreme fraiche; (sour cream)
3tablespoonsOlive oil
1tablespoonMustard; (or mustard powder)
2tablespoonsCurry powder
¼cupBoiling water

Directions

FOR THE DRESSING

Remove the chicken from the bones and shred or cut into fine strips or chunks. Place the chicken in a large bowl with the apple, onions slices, capsicum, sultanas and coconut. Mix well.

For the dressing, whisk all the ingredients together until well combined.

Pour over the chicken mixture and toss until the dressing is well distributed and has coated all the chicken.

Chill until ready to serve. Garnish with capsicums and coconut.
