Yield: 6 Servings
Measure | Ingredient |
---|---|
12 \N | Taco shells |
3 cups | Mexican meat mix (recipe) |
2 cups | Cheddar cheese; grated |
1 \N | Shredded lettuce |
2 \N | Tomatoes; chopped |
¼ cup | Green onion, chopped |
7 ounces | Can green chili salsa |
Heat Mexican Meat Mix in a small saucepan. Place ¼ c in each taco shell and top with grated cheese, lettuce, tomatoes, green onion, and salsa. Serve immediately.
Variation: Make your own taco shells by frying corn tortillas in 2" of hot oil (375 F.) in a large skillet. Using tongs, fold each tortilla in half, then immediately open to a 45-degree angle. Fry about one minute until crisp and then drain on a paper towels or a 'taco rack'.
