Swordfish delmonico

Measure Ingredient
½ cup Butter
2 tablespoons Flour
½ cup Milk
¼ cup Grated Parmesan cheese
\N \N Salt & pepper
½ cup Dry sherry
2 pounds Swordfish, halibut, bass,
\N \N Snapper
½ cup Crab meat
½ cup Cooked shrimp
\N \N Minced parsley (for
\N \N Garnish)

Melt butter in top of double boiler directly on cooking surface; add flour slowly, stirring constantly. Place top over boiling water; add milk & continue stirring until sauce thickens. Add cheese, salt, pepper & sherry, mixing thoroughly. Place fillets, crab & shrimp in greased baking dish; pour sauce over fish. Cover & bake in 350 oven for 30 minutes or until bubbly. Garnish with parsley just before serving.
