Swordfish with salmoriglio sauce

Ingredients

½cupOlive oil
¼cupLemon juice, fresh
2tablespoonsHot water
6tablespoonsParsley, fresh, chopped
2largesGarlic cloves, fine chopped
1tablespoonOregano, dried
6Swordfish fillets (6 oz ea.)

Directions

Preheat broiler or BBQ. Whisk olive oil in top of double boiler over simmering water until heated through. Gradually add the lemon juice, then 2 Tbsp hot water. Add chopped parsley, garlic and oregano; cook sauce 5 minutes to allow flavors to blend, whisk frequently. Season sauce with salt & pepper to taste, remove from heat.

Lighty brush fish on both sides with sauce. Season with salt & pepper.

Grill or broil until just cooked through, about 5 minutes per side.

Arrainge fish on platter and spoon remaining sauce over.
