Sweet tater pie

2cupsCOOKED SWEET TATERS, MASHED
1cupBROWN SUGAR
1cupLIGHT CREAM
½cupMILK
3EGGS
½teaspoonSALT
1teaspoonCINNAMON, GROUND
1teaspoonNUTMEG, GROUND
1each11 INCH UNBAKED PIE SHELL
2cupsSOUR CREAM
¼cupSIFTED CONFECTIONERS SUGAR
½teaspoonVANILLA EXTRACT
½teaspoonGINGER, GROUND

Directions

Combine Sweet taters, Brown Sugar, Cream, Milk, Eggs, Salt, Cinnamon, Nutmeg and Ginger in a large mixing bowl. Pour into pastery shell.

Bake in a preheated oven at 350 degrees for 1 hour or until a knife inserted in the center comes out clean. Cool on rack. Mix Sour Cream, Convectioners Suger and Vanilla, spoon around the outside edge of the pie to decorate.
