Sweet potato - carrot puff

Ingredients

¼cupChopped onion
2tablespoonsButter or margarine
2cans(16 Oz.) sweet potatoes drained
1can(16 Oz.) diced carrots; drained
1pack(3 Oz.) cream cheese; softened
2Eggs
1teaspoonSalt
¼teaspoonNutmeg
teaspoonWhite pepper

Directions

Cook onion in butter until tender. In mixer bowl, beat sweet potatoes and carrots until smooth; add remaining ingredients and beat at medium speed until fluffy. Stir in onions. Turn into a 1½ quart casserole and bake, uncovered, for 45 minutes or until bubbly.

Garnish with apple slices, if desired. Serves 8.
