Sweet potato - carrot puff

Yield: 8 Servings

Measure Ingredient
¼ cup Chopped onion
2 tablespoons Butter or margarine
2 cans (16 Oz.) sweet potatoes drained
1 can (16 Oz.) diced carrots; drained
1 pack (3 Oz.) cream cheese; softened
2 \N Eggs
1 teaspoon Salt
¼ teaspoon Nutmeg
⅛ teaspoon White pepper

Cook onion in butter until tender. In mixer bowl, beat sweet potatoes and carrots until smooth; add remaining ingredients and beat at medium speed until fluffy. Stir in onions. Turn into a 1½ quart casserole and bake, uncovered, for 45 minutes or until bubbly.

Garnish with apple slices, if desired. Serves 8.
