Surimi~spinach & cannellini bean casserole

| 2 | teaspoons | Olive oil |
| 1 | pounds | Crab surimi chunk seafood |
| 2 | 15 oz can cannellini beans | |
| 10 | ounces | Pkg. chopped spinach,thawed |
| 1 | Red bell pepper,cut in strip | |
Directions
In a 2½ quart casserole,combine onion,garlic,cumin and olive oil;mix well.Do not cover.Microwave for 4 minutes.Add surimi,drained beans,spinach and bell pepper;toss gently to combine.Cover with lid or vented plastic wrap.Stirring midway through cooking,microwave on high 5 to 6 minutes or until thoroughly heated.Let stand 3 minutes.
