1 can | (1 pound) cream style corn (about 2 cups) |
1 cup | Milk |
1 \N | Egg, beaten |
1 cup | Crushed cracker crumbs |
¼ cup | Minced onion |
3 tablespoons | Chopped pimento (optional) |
¾ teaspoon | Salt |
½ cup | Buttered cracker crumbs (we use Ritz) |
Heat corn and milk together, gradually stir in the egg. Add the next 4 ingredients and a dash of pepper; mix well. Pour into a greased 8 inch round casserole dish. Sprinkle with buttered cracker crumbs. Bake at 350 degrees for 20 minutes.
