Sundried fish platter

Measure Ingredient
375 grams Smoked mackerel fillet; skinned and flaked
; (12oz)
2 Pink grapefruit; peeled and
; segmented
Lollo biondo lettuce leaves
1 bunch Watercress
4 Salad onions; finely chopped
1 small Red pepper; diced
2 tablespoons Light olive oil
1 tablespoon White wine vinegar
1 tablespoon Freshly chopped parsley
Salt and freshly ground black pepper

FOR THE PLATTER

FOR THE DRESSING

Arrange the smoked mackerel and grapefruit on a bed of lollo biondo and watercress.

Sprinkle over the salad onions and pepper.

Blend the dressing ingredients together and spoon over just before serving.
