Summer vegetables and cheese

Ingredients

1smallOnion -- thinly sliced
2tablespoonsCooking oil
2mediumsZucchini -- sliced
2mediumsYellow squash -- sliced
3mediumsTomatoes -- diced
8ouncesMozzarella cheese -- grated

Directions

Saute onion with oil in large skillet or wok. Cook until clear. Add zucchini and yellow squash and cook until just tender. Add tomatoes and cheese and cook until cheese has just melted. Serve immediately.
