Yield: 4 servings
|Vegetable cooking spray|
|4||Cloves garlic, minced|
|2 cups||Sliced zucchini|
|2 cups||Sliced yellow squash|
|1 cup||Chopped tomato|
|½ cup||Julienne-sliced green pepper|
|½ cup||Ready-to-serve, no-salt- added chicken broth|
|1 tablespoon||Chopped fresh basil -OR-|
|1 teaspoon||Dried whole basil|
Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add garlic, and cook 1 minute. Add zucchini and next 4 ingredients. Cook 3 minutes or until vegetables are crisp-tender, stirring constantly. Stir in basil. Yield: 4 servings.
