Summer vegetables

Yield: 4 servings

Measure Ingredient
\N \N Vegetable cooking spray
4 \N Cloves garlic, minced
2 cups Sliced zucchini
2 cups Sliced yellow squash
1 cup Chopped tomato
½ cup Julienne-sliced green pepper
½ cup Ready-to-serve, no-salt- added chicken broth
1 tablespoon Chopped fresh basil -OR-
1 teaspoon Dried whole basil

Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add garlic, and cook 1 minute. Add zucchini and next 4 ingredients. Cook 3 minutes or until vegetables are crisp-tender, stirring constantly. Stir in basil. Yield: 4 servings.
