Stuffed artichokes (mf)

1cupWhole milk ricotta cheese
1Egg, lightly beaten
2tablespoonsGrated parmesan cheese
Salt and freshly ground black pepper
4ouncesBlack forest ham, in thin strips
4Artichokes cooked, chokes removed
¼cupDry bread crumbs
2tablespoonsMelted butter

Directions

Preheat the oven to 350 degrees. Blend the ricotta, egg, Parmesan and season to taste with salt and pepper. Blend in the ham. Stuff the artichokes and set them in a baking pan. Add some water to the bottom of the baking pan. Sprinkle breadcrumbs and melted butter over the top and bake for 30 minutes or until the top is golden.
