Stuffed artichokes ii

Yield: 4 servings

Measure Ingredient
4 \N Artichokes
½ pounds Swiss cheese, grated
¼ pounds Mozzarella cheese, grated
½ cup Celery, chopped fine
½ cup Onion, chopped fine
1 pounds Crabnmeat
4 ounces Hot pepper cheese, grated
\N \N Salt & Pepper & Red pepper
¼ cup Bell pepper, chopped fine
½ cup Bread crumbs
1 \N Stick butter
2 \N Eggs, well beaten

Wash artrichokes and cut off tips. Boil until tender. Drain.

Saute celery, bell pepper and onions in butter. Remove from heat.

Add crabmeat and grated cheeses. Add bread crumbs and eggs. Mix well. Clean out heart of artichokes and stuff with crab mixture.

Stuff each leaf. Wrap in foil and bake at 375 F. for 35 min.
