Strawberry-apricot caramel sundaes

Yield: 4 servings

Measure Ingredient
1 cup Apricots; Chopped
1 cup Sliced Strawberries
2 tablespoons Orange Juice
2 cups Vanilla Low-Fat Ice Cream
¼ cup Fat-Free Butterscotch Flavored Syrup
4 teaspoons Pistachio Nuts; Chopped
\N \N Sugar Cookies; Optional

Combine first 3 ingredients in a bowl; stir well. Cover and chill 30 minutes. Spoon ice cream into stemmed glasses; top with fruit mixture and syrup. Sprinkle with pistachios. Serve with a sugar cookie, if desired.
