Yield: 4 servings
|1 cup||Apricots; Chopped|
|1 cup||Sliced Strawberries|
|2 tablespoons||Orange Juice|
|2 cups||Vanilla Low-Fat Ice Cream|
|¼ cup||Fat-Free Butterscotch Flavored Syrup|
|4 teaspoons||Pistachio Nuts; Chopped|
|Sugar Cookies; Optional|
Combine first 3 ingredients in a bowl; stir well. Cover and chill 30 minutes. Spoon ice cream into stemmed glasses; top with fruit mixture and syrup. Sprinkle with pistachios. Serve with a sugar cookie, if desired.
