|2½||To 3 - lb. chicken|
|2 cups||Fine,dry noodles|
|1 bunch||Celery tops,carrot,a sprig of parsley|
|(all tied together)|
Cut chicken into pieces. Add water, salt and seasonings. Bring to a boil; remove scum and simmer chicken until tender, about 3 to 4 hours. Remove bunch of vegetable seasonings. Add noodles to chicken and simmer 15 minutes. Add pepper and more salt, if necessary.
