Yield: 4 servings
|1 tablespoon||Shallots; chopped|
|4 tablespoons||Butter or margarine|
|1 tablespoon||Parsley; chopped|
|2 teaspoons||Lime juice|
|½ teaspoon||Tabasco pepper sauce|
In saucepan, combine rum and shallots; bring to a boil. Reduce heat; simmer 2 minutes. Stir in butter, parsley, lime juice and tabasco sauce. Brush steaks with rum butter. Grill or broil 6" from heat.
Cook about 8 minutes, turning steak once. Brush with rum butter occasionally. Heat any remaining rum butter to boil and serve with steaks. Serve with additional tabasco sauce if desired.
