|200 grams||Squid; cleaned|
|\N \N||Good olive oil|
|½ \N||Clove garlic; chopped|
|½ small||Red chilli; seeded and chopped|
|1 \N||Paring of lemon rind; no pith, finely|
|\N \N||; chopped|
|1 tablespoon||Chives; chopped|
|1 tablespoon||Parsley; chopped|
Bring a pan of well salted water to the boil.
Slice the squid as finely as possible and blanch for a matter of seconds, use a sieve to lower it into the water.
Toss in a bowl with everything else, check seasoning and serve.
