Squid spaghetti

200gramsSquid; cleaned
Good olive oil
½Clove garlic; chopped
½smallRed chilli; seeded and chopped
1Paring of lemon rind; no pith, finely
; chopped
1tablespoonChives; chopped
1tablespoonParsley; chopped

Directions

Bring a pan of well salted water to the boil.

Slice the squid as finely as possible and blanch for a matter of seconds, use a sieve to lower it into the water.

Toss in a bowl with everything else, check seasoning and serve.
