Squid spaghetti

| Good olive oil | ||
| ½ | Clove garlic; chopped | |
| ½ | small | Red chilli; seeded and chopped |
| 1 | Paring of lemon rind; no pith, finely | |

| 1 | tablespoon | Chives; chopped |
| 1 | tablespoon | Parsley; chopped |
Directions
Bring a pan of well salted water to the boil.
Slice the squid as finely as possible and blanch for a matter of seconds, use a sieve to lower it into the water.
Toss in a bowl with everything else, check seasoning and serve.
