Spinach and onions in yogurt

Ingredients

3tablespoonsOlive oil
2mediumsOnion(s), chopped (abt 2 1/2 cups)
2largesGarlic clove(s), minced
10ouncesPkg fresh spinach stems removed leaves coarsely chopped
8ouncesCarton plain yogurt

Directions

Heat oil in heavy large skillet over medium-high heat. Add onions and garlic and saut until golden brown, about 10 minutes. Add spinach and saut just until wilted, about 2 minutes. Transfer mixture to large bowl. Cool slightly. Add yogurt to spinach mixture and stir to blend.

SEason to taste with salt and pepper. Serve warm or at room temperature.
