Spinach & cashew salad

Yield: 4 Servings

Measure Ingredient
1½ cup Chopped raw spinach leaves
½ cup Watercress
4 \N Green onions; sliced
⅓ cup Cashews
½ cup Croutons
\N \N Vegan salad dressing (your favorite one)

Combine the spinach, watercress, green onions, and cashews in a serving bowl. Spoon the dressing over the salad and toss. Eat immediately while crisp.
