Spinach sprout salad

Ingredients

2 | cups | Lettuce, chopped |
2 | cups | Spinach, chopped |
2 | cups | Alfalfa sprouts |
1 | cup | Assorted sprouts *1 |
1 | cup | Cucumber, peeled, cubed |
1 | medium | Tomato, sliced |
1 | cup | Arugula, chopped (optional) |
2 | tablespoons | Olive oil |
2 | teaspoons | Lemon juice, fresh |
2 | teaspoons | Soy sauce -OR- |
½ | teaspoon | Dijon mustard |
Directions
*1 lentil, mung bean, aduki, radish, pea, red clover or wheat berry.
Combine vegetables and sprouts in large bowl. Add oil and toss. Add lemon juice and soy sauce or mustard and toss again.
