Spinach salad with walnuts

Measure Ingredient
2 pounds Spinach; stemmed, washed and dry
1 cup Walnut pieces
½ cup Currants
1 small Red onion; thinly sliced
\N \N Freshly ground pepper; to taste
½ cup White wine vinegar
2 teaspoons Dijon mustard
2 tablespoons Sugar
2 tablespoons Heavy cream
¾ cup Olive oil

DRESSING

Cost: $ - Preparation Time: 10 minutes Difficulty Level: 1 Servings: 8 1. Place the spinach, walnuts, currants and red onion in a large salad bowl.

2. In a sauce pan, add the salt, pepper, vinegar, mustard and sugar and heat to simmering while whisking occasionally.

3. Whisk in the heavy cram and then the olive oil in a steady stream.

4. Taste for seasoning and add more salt or pepper if necessary.

5. Cool.

6. Before serving, pour dressing over the salad mixture and toss.

7. Serve immediately.
