Spicy pork stir fry

| 600 | grams | Pork Strips |
| 3 | tablespoons | Peanut oil |
| 8 | Spring onions; sliced | |
| 2½ | teaspoon | Grated ginger |
| 1 | Clove garlic; crushed | |
| 3 | Red chillies; (seeded), finely | |

| 5½ | tablespoon | Lemongrass; finely chopped |
| 1 | tablespoon | Grated lime rind |
| 3 | tablespoons | Lime juice |
| 2 | tablespoons | Hoisin sauce |
| 1½ | tablespoon | Salt reduced soy sauce |
| ⅓ | cup | Chicken stock |
| 200 | grams | Sliced baby beans |
Directions
Heat 1 tablespoon oil in wok, add half the pork, quickly toss to brown and sear (1 -2 minutes). Remove to side dish. Repeat with another tablespoon oil and remaining pork, remove. Heat remaining oil, reduce heat. Add spring onions, ginger, garlic, chillies and lemongrass, stir and cook 1 minute.
Add rind, juice, hoisin sauce, soy sauce, stock and beans, cook 1-2 minutes. Return pork to wok, stir to combine. Serve with boiled noodles or rice.
