Spicy chile oil dressing

Measure Ingredient
3 tablespoons Sesame oil
3 tablespoons Vegetable oil
2 smalls Dried hot chiles
\N \N (or 1/2 teaspoon red chile flakes)
3 tablespoons Coarsely-chopped fresh ginger
3 tablespoons Chopped scallions
⅓ cup Soy sauce
1½ tablespoon Sugar
¼ cup Rice wine vinegar

Heat the oils until smoking and add the chiles, ginger and scallions. Cover and remove from heat and allow to cool to room temperature. Strain the oil, pressing hard on seasonings, and then discard them. Mix the oil with the remaining ingredients, stirring to dissolve sugar.
