Spiced red cabbage with apples and thyme - bon appetit

1poundsTart green apples (such as Granny Smith), peeled, cored, finely chopped
1largeOnion, finely chopped
½cupDry red wine
½cupOrange juice
2tablespoonsRed wine vinegar
2tablespoonsFirmly packed dark brown sugar
2Garlic cloves, chopped
1tablespoonGrated orange peel
1teaspoonDried thyme
¼teaspoonGround cinnamon
¼teaspoonGround nutmeg
¼teaspoonGround allspice

Directions

Preheat oven to 400'F. Place all ingredients in heavy large ovenproof Dutch oven. Cover; bake until cabbage is tender, about 1 hour.

Transfer Dutch oven to stovetop, uncover and boil until juices thicken slightly, about 5 minutes. Season to taste with salt and pepper.
