|\N \N||Zest and juice of 1 medium orange|
|100 millilitres||Red wine|
|250 grams||Cranberries; fresh or frozen|
|½ medium||Onion; diced|
|25 grams||Fresh ginger; peeled and cut into|
|\N \N||; julienne strips|
|3 tablespoons||Dark brown sugar|
|\N \N||Salt and freshly ground pepper|
|\N \N||Cinnamon; (optional)|
|2 tablespoons||Grand Marnier|
Cut the orange into julienne strips. Heat the juices in a small saucepan with ¼ of the wine and cook until tender - about 10 minutes.
In a medium saucepan, combine the cranberries, onion, rest of the wine, ginger, brown sugar, salt and pepper with the cinnamon and cook until the relish thickens. Approximately 15-20 minutes - stirring occasionally.
Stir in the Grand Marnier and the reserved orange mixture. Cool and transfer to a serving bowl. Refrigerate until needed.
