Spiced cranberry relish

Yield: 8 servings

Measure Ingredient
\N \N Zest and juice of 1 medium orange
100 millilitres Red wine
250 grams Cranberries; fresh or frozen
½ medium Onion; diced
25 grams Fresh ginger; peeled and cut into
\N \N ; julienne strips
3 tablespoons Dark brown sugar
\N \N Salt and freshly ground pepper
\N \N Cinnamon; (optional)
2 tablespoons Grand Marnier

Cut the orange into julienne strips. Heat the juices in a small saucepan with ¼ of the wine and cook until tender - about 10 minutes.

In a medium saucepan, combine the cranberries, onion, rest of the wine, ginger, brown sugar, salt and pepper with the cinnamon and cook until the relish thickens. Approximately 15-20 minutes - stirring occasionally.

Stir in the Grand Marnier and the reserved orange mixture. Cool and transfer to a serving bowl. Refrigerate until needed.
