1 cup Flour; whole-grain wheat
⅓ cup Brown sugar; or substitute
⅓ cup Cornstarch
2 teaspoons Baking powder
½ teaspoon Salt; optional
½ teaspoon Cinnamon
⅛ teaspoon Ginger
⅛ teaspoon Nutmeg
2 \N Egg whites; or substitute
⅔ cup Nonfat milk; or nonfat soy milk
⅓ cup Corn syrup; dark
1 teaspoon Vanilla
¼ cup Butter or margarine
2¼ cup Powdered sugar
2 tablespoons Milk
¾ teaspoon Maple extract

In a sm. bowl, using a fork or wire whisk, mix egg whites or substitute, milk, corn syrup and vanilla. Add to flour mixture; stir until smooth. Pour into a sprayed 9" sq. pan and bake in a 350 deg F oven 25 - 30 min, or until a toothpick inserted in center comes out clean. Cool in pan on wire rack. Serving Ideas : Serve with applesauce.

Maple Frosting: Cream butter; gradually add 1 cup powdered sugar, beating well at medium speed of an electric mixer. Add remaining sugar alternately with milk, beating until smooth enough to spread.
