Speedy christmas pudding

Measure Ingredient
1 \N 411 gram jar luxury mincemeat
3 tablespoons Cointreau liquor or brandy
50 grams Flaked; toasted almonds
\N \N Grated rind of 1 orange
1 \N Orange; juice of
2 tablespoons Black treacle
2 \N Eggs; beaten
50 grams Fresh white bread crumbs
75 grams Self raising flour
\N \N Butter for greasing

1 Grease and line the base of a 1 litre/1¾ pt microwave-proof pudding basin.

2 Combine all the ingredients in a large bowl until well blended together.

Pour the mixture into the prepared basin and level the top.

3 Cover the basin top with buttered greaseproof paper and then microwave clingfilm, pierced several times.

4 Microwave on medium for eight minutes and then allow to rest for five minutes before turning out on a serving plate. To reheat, microwave on medium heat for five minutes.
