Ingredients

½ | cup | Grated lemon peel |
½ | cup | Peach jam |
½ | cup | Orange marmalade |
4 | Egg whites | |
⅓ | cup | Sugar |
2 | tablespoons | Sugar |
½ | teaspoon | Salt |
Directions
Mix lemon and Jam. Beat 3 egg whites, 1.3 cup sugar and salt until stiff.
Combine with lemon mixture. Drop from a spoon on clean white or brown paper on a cookie sheet. (I use the baking paper from Pampered Chef, and no, I do not work for them!!) Bake 10 minutes in a hot oven. Remove from oven and cover with a meringue of 1 egg white, stiffly beaten with 2 tablespoon sugar. Return and bake until light brown.
