Smoked mussel mushrooms

| 1 | 150 gram can smoked mussels | |
| 1 | 15 grams can smoked oysters; roughly chopped | |
| 125 | grams | Wild mushrooms; ie shittake, |
| ; oyster, roughly | ||
| ; chopped (4oz) | ||
| 1 | Lemon; juice of | |
| 2 | tablespoons | Fresh parsley; chopped |
| Salt and freshly ground black pepper | ||
Directions
Brush the flat mushrooms with oil and gently grill for 5 minutes.
Meanwhile, fry the wild mushrooms in a pan for 2-3 minutes. Stir in the mussels and oysters and cook for a further 2 minutes.
Add the lemon juice, parsley and season to taste.
Pile the mixture into the mushrooms. Serve garnished with green salad leaves and lemon wedges.
