Smoked mackerel and banana kedgeree

150gramsBasmati rice; cooked (5oz)
175gramsSmoked mackerel fillets; skinned and flaked
; (6oz)
2tablespoonsFreshly chopped parsley
4Bananas; peeled and sliced
2tablespoonsLemon juice
Salt and freshly ground black pepper

Directions

Melt the butter in a large pan and fry the curry powder for 1 minute.

Stir in the remaining ingredients and cook for 2-3 minutes, stirring occasioanlly.

Serve immediately.
