Smoked mackerel and banana kedgeree

Yield: 4 servings

Measure Ingredient
25 grams Butter; (1oz)
1 teaspoon Mild curry powder
150 grams Basmati rice; cooked (5oz)
175 grams Smoked mackerel fillets; skinned and flaked

2 tablespoons Freshly chopped parsley
4 \N Bananas; peeled and sliced
2 tablespoons Lemon juice
\N \N Salt and freshly ground black pepper

Melt the butter in a large pan and fry the curry powder for 1 minute.

Stir in the remaining ingredients and cook for 2-3 minutes, stirring occasioanlly.

Serve immediately.
