|1 tablespoon||Lemon juice|
|1 tablespoon||Olive oil or good quality cooking oil|
Combine all the ingredients for the marinade and mix well together. Remove skin from kippers and slice thinly, slantwise. Put kipper pieces into a bowl. Pour marinade over, cover and allow to steep for an hour or overnight, if possible. Serve with buttered brown bread. Garnish with chopped parsley and lemon wedges.
