Sharon's cinnamon oatbran pancakes

Yield: 1 Servings

Measure Ingredient
¾ cup Whole Wheat Flour
¾ cup All-purpose Flour
¾ cup Oat Bran
2 tablespoons Sugar
1 tablespoon Baking Powder
1 teaspoon Cinnamon
½ teaspoon Salt
1 teaspoon Vanilla
2 tablespoons Oil
2 \N Eggs
1½ cup Buttermilk

Mix dry ingredients in a large bowl (I like to use the big 8 cup Tupperware measuring "cup"). Add the wet ingredients and stir well. As the batter sits it will get thicker, so add additional buttermilk or regular milk to get a consistency you prefer. If you've made pancakes before then you know how to do the rest: Pour about ¼ cup onto a hot griddle; turn when the top is bubbly and serve with butter or margarine and maple syrup.
