Scalloped potatoes and peppers

Ingredients

cupSweet red Pepper, sliced
cupSweet green pepper, sliced
cupSweet yellow pepper, sliced
½cupOnion, minced
Salt and pepper to taste^
1canCream of Mushroom soup
1canMilk
½cupCheddar cheese grated
½cupMozzarella cheese grated

Directions

Spray 13 by 9 baking dish with Vegetable Oil Spray. Mix milk and soup together. layer as follows, potatoes, peppers, onion, salt and pepper, cheese for 2 layers, then for last layer, top with soup mixture, then top with cheese.

Bake 350 for 1 hour. covered, uncover and bake 10 minutes longer let sit for about 10 minutes before serving.
