Ingredients

1can(6-oz.) Dole pineapple juice
¾poundsFlank steak
2Green, red or yellow bell peppers,, cut in strips
1largeRed onion, sliced
1cupMonterey jack cheese,, shredded
4Flour tortillas

Directions

Pour pineapple juice over flank steak in non-metallic dish. Cover; marinate 30 minutes in refrigerator. Discard marinade. Grill or broil steak with peppers, onion for 15 minutes for medium rare or until vegetables are tender. Divide steak and vegetables and cheese among 4 (8 inch) flour tortilla. Roll up. Serves 4.
