Sausage-and-pepper heros - country cooking

Ingredients

2tablespoonsButter or margarine
2Hot and 2 sweet Italian sausages, sliced into 1/2 inch pieces
2eachesMedium-size sweet red and green peppers
1mediumOnion
3Cloves garlic, finely chopped
½teaspoonDried basil
½teaspoonSalt
¼teaspoonDried oregano leaves
¼teaspoonGround black pepper
46-inch French rolls or 6-inch pieces of French or Italian bread

Directions

1. In large skillet, melt butter over low heat; saute sausage pieces until well browned and cooked through. Push to side of skillet.

2. Quarter, seed, and thinly slice peppers. Cut slices in half.

Coarsely chop onion. In butter remaining in skillet, saute peppers, onion, and garlic until just tender. Add basil, salt, oregano, and black pepper. Stir in sausage pieces.

3. Split rolls; top with sausage-and-pepper filling. Serve immediately.
