Yield: 10 servings

Measure Ingredient
4 eaches tomatoes, peeled and seeded
8 eaches scallions
5 eaches pickled jalapenos, minced
4 eaches sprigs cilantro, minced
1 each salt & pepper to taste
4 eaches cloves garlic, minced
2 tablespoons olive oil

4 medium-size ripe tomatoes, peeled and seeded 8 scallions, including some green part, minced 5 pickled jalapenos, minced

4 sprigs cilantro, minced

salt & pepper to taste

(4 cloves garlic, minced)

(2 TBS olive oil)

Mix all ingredients in a food processor until they form a thick sauce.

Chill and serve. The ingredients in parentheses are my own additions Makes about 1½ cups
