Rum mincemeat muffins

Ingredients

| 1½ | cup | Flour |
| ¼ | cup | Sugar |
| 2 | tablespoons | Baking powder |
| pinch | Salt | |
| ½ | cup | Butter |
| ½ | cup | Apple juice |
| 2 | Beaten eggs | |
| 1 | cup | Mincemeat |
| ½ | cup | Dark rum |
| 12 | Sugar cubes | |
Directions
Mix dry ingredients in a bowl & set aside. Melt butter in a saucepan & add apple juice & beaten eggs. Stir the liquid into the dry ingredients, then add mincemeat. When just mixed, spoon into well greased muffin tins filling only about ⅔ full. Soak sugar cubes in rum & place 1 cube on top of each muffin. Bake for 20 minutes in 375 oven. Serve warm.
