Roasted green beans with garlic

Ingredients

1poundsGreen beans; stemmed
3Garlic cloves; smashed
3Sprigs of thyme coarsely chopped
¼cupExtra-virgin olive oil
Salt and pepper
3Anchovy fillets; mashed
2teaspoonsTo 3 ts lemon juice
Zest of 1 lemon, finely grated

Directions

1. Preheat oven to 450øF. In a large baking dish, toss the green beans with the garlic, thyme and olive oil and season with salt and pepper. Spread the beans and seasonings in a single layer and roast for about 15 minutes, tossing occasionally, until tender and lightly browned. Discard the thyme.

2. Transfer the beans to a bowl. Add the anchovies, lemon juice and lemon zest and toss well to coat. Serve warm or at room temperature.
