Roasted green beans with garlic

Ingredients

| 3 | Sprigs of thyme coarsely chopped | |
| ¼ | cup | Extra-virgin olive oil |

| 3 | Anchovy fillets; mashed | |
| 2 | teaspoons | To 3 ts lemon juice |
| Zest of 1 lemon, finely grated | ||
Directions
1. Preheat oven to 450øF. In a large baking dish, toss the green beans with the garlic, thyme and olive oil and season with salt and pepper. Spread the beans and seasonings in a single layer and roast for about 15 minutes, tossing occasionally, until tender and lightly browned. Discard the thyme.
2. Transfer the beans to a bowl. Add the anchovies, lemon juice and lemon zest and toss well to coat. Serve warm or at room temperature.
