Rick stein's cherry tomato and rocket salad

Yield: 4 servings

Measure Ingredient
450 grams Vine-grown cherry tomatoes
50 grams Wild rocket
Maldon salt and ground black pepper
3 tablespoons Good quality extra virgin; (3 to 4)
Olive oil

1 Quarter the tomatoes and break the stalks off the rocket leaves. Put the tomatoes into a bowl and toss with some salt and pepper.

2 Add the rocket leaves and toss again. Pile the salad into the centre of four bowl-shaped plates, drizzle with olive oil and serve straight away.
