Refried beans with tomato

Yield: 4 Servings

Measure Ingredient
2 cans (15oz.) of pinto beans
3 tablespoons Olive oil
1 medium Onion, chopped
1 teaspoon Hot Sauce (like Tabasco or Religious Experience)
2 mediums Tomatoes, peeled, seeded, chopped
1 tablespoon Diced red bell pepper
½ cup Sour cream
2 tablespoons Chopped scallion

1. Mash beans with a potato masher, or in a food processor.

2. In a large frying pan, heat olive oil. Add onion, chilies, bell pepper, and tomatoes. Cook until onion is translucent. Add mashed beans and hot sauce. Cook over low heat, stirring frequently, for 7-10 minutes. Serve warm as a side with a dollop of sour cream and some chopped scallion for garnish.
