Red plum sorbet - bon appetit

Ingredients

2 pounds Ripe sweet red plums, unpeeled, pitted and chopped
¼ To 1/2 C sugar
¼ To 1/2 C water
1 To 3 T (about) fresh lime juice

Directions

The amounts of sugar, water and lime juice used will vary according to the sweetness and juiciness of the plums. Make sure to taste a piece of fruit before you begin to prepare the recipe.

Cook plums, sugar to taste and ¼ C water in heavy medium saucepan over low heat until medium-thin puree forms, stirring occasionally, about 12 minutes. (If plums do not form puree, add up to ¼ C water.) Cool.

Puree mixture in processor or blender, stopping to scrape down sides, 3 minutes. Blend in lime juice to taste.

Transfer plum mixture to ice cream maker and process according to manu- facturer's instructions, or, without an ice cream maker, freeze following directions in Very Berry Ice Milk recipe.

Transfer sorbet to plastic container. Cover and freeze several hours or overnight to mellow flavors. If frozen solid, let soften slightly at room temperature.
