Red pepper rounds

Yield: 8 rounds

Measure Ingredient
1 can Roasted red peppers (7.5 oz)
1 Garlic clove, put through a garlic press
2 tablespoons Extra virgin olive oil
2 tablespoons Roughly chopped parsley
2 tablespoons Capers (opt)
Salt to taste
Pepper to taste
8 slices Baguette-style French bread, toasted or grilled (1")

Dry peppers with paper towels. Chop coarsely. Mix all ingredients except bread; heap atop bread.

Per round: 17 milligrams vitamin C, 85 calories, 2 grams protein, 11 grams carbohydrates, ½ grams fiber, 3⅗ grams fat (½ grams saturated), 105 milligrams sodium.
