Red cabbage casserole

8cupsShredded red cabbage
1mediumOnion -- chopped
½cupLemon juice -- or vinegar
¼cupSugar
1teaspoonSalt
1mediumApples -- or 2 chopped
¼cupRed currants -- jelly
Lemon slices -- optional

Directions

In a dutch oven melt shortening. add the cabbage, onion, lemon juice or vinegar, sugar and salt; mix well. Cover and cook over medium heat for 10 to 15 min. or until cabbage is crisp-tender, stirring occasionally. Add apples; cook 10 to 15 min. more or until cabbage and apples are tender. Stir in jelly until melted. Garnish with lemon slices if desired. Yield: 8 to 10 servings.
