Rice and cabbage casserole

Yield: 6 Servings

Measure Ingredient
2 tablespoons Butter
½ cup Chopped onion
1 teaspoon Salt
⅛ teaspoon Pepper
1 cup Uncooked rice
2½ cup Water
4 cups Shredded cabbage; liberal
1 cup Grated cheese

In a 2 quart casserole. place the butter, onion, salt, pepper, rice and water. Top with cabbage. Sprinkle salt over the cabbage. Cover the baking dish and place in 350 degree oven for about 50 minutes or until the rice has absorbed most of the water and is moist and tender but not dry.

Uncover, sprinkle with cheese and place under broiler to brown.
