Red beans and rice #13

Ingredients

| 1 | large | Onion; chopped |
| 2 | cans | Black beans (I know it says \"red\" beans; but I prefer black; purists can substitute kidney beans) |
| 2 | Bay leafs | |
| ½ | cup | Chopped fresh parsley (do not use dried parsley!!!!) |
| Tabasco to taste (boy; does that leave an opportunity open!) | ||
Directions
Add enough water to make it just a little bit soupy. Simmer for one hour, stirring periodically. Serve over rice. The original recipe also calls for adding sausage, like a polska kilbasa, not breakfast sausage. I'm vegetarian, so I don't add it. Snyder_Curtis <CurtisS@...>
