Red beans and rice #13

Yield: 4 Servings

Measure Ingredient
1 large Onion; chopped
2 cans Black beans (I know it says \"red\" beans; but I prefer black; purists can substitute kidney beans)
2 \N Bay leafs
½ cup Chopped fresh parsley (do not use dried parsley!!!!)
\N \N Tabasco to taste (boy; does that leave an opportunity open!)

Add enough water to make it just a little bit soupy. Simmer for one hour, stirring periodically. Serve over rice. The original recipe also calls for adding sausage, like a polska kilbasa, not breakfast sausage. I'm vegetarian, so I don't add it. Snyder_Curtis <CurtisS@...>
