Yield: 4 Servings
|1 large||Onion; chopped|
|2 cans||Black beans (I know it says \"red\" beans; but I prefer black; purists can substitute kidney beans)|
|2 \N||Bay leafs|
|½ cup||Chopped fresh parsley (do not use dried parsley!!!!)|
|\N \N||Tabasco to taste (boy; does that leave an opportunity open!)|
Add enough water to make it just a little bit soupy. Simmer for one hour, stirring periodically. Serve over rice. The original recipe also calls for adding sausage, like a polska kilbasa, not breakfast sausage. I'm vegetarian, so I don't add it. Snyder_Curtis <CurtisS@...>
