Red beans and rice #13

Ingredients

1largeOnion; chopped
2cansBlack beans (I know it says \"red\" beans; but I prefer black; purists can substitute kidney beans)
2Bay leafs
½cupChopped fresh parsley (do not use dried parsley!!!!)
Tabasco to taste (boy; does that leave an opportunity open!)

Directions

Add enough water to make it just a little bit soupy. Simmer for one hour, stirring periodically. Serve over rice. The original recipe also calls for adding sausage, like a polska kilbasa, not breakfast sausage. I'm vegetarian, so I don't add it. Snyder_Curtis <CurtisS@...>
