Red beans and rice #03

1 | pounds | Dried red beans |
1 | Meaty ham bone | |
2 | larges | Onions; chopped |
1 | cup | Parsley; chopped |
3 | Cloves (large) garlic; chopped | |
1 | tablespoon | Salt |
1 | dash | Red pepper |
1 | teaspoon | Black pepper |
¼ | teaspoon | Sugar |
1 | dash | Hot sauce |
¼ | teaspoon | Oregano leaves |
¼ | teaspoon | Thyme leaves |
1 | tablespoon | Worcestershire sauce |
4 | ounces | Tomato sauce |
1½ | pounds | Ground Italian sausage; cooked & drained |
Directions
Soak beans overnight in water to cover. Pour beans & water into a pot & add ham bone. Add water to cover. Cook slowly 3 hours. Add all other ingredients to beans except sausage. Cook uncovered 1 hour. Cool overnight, if possible. When ready to serve, warm with sausage & serve over rice.
