Really simple pasta & bean salad

Yield: 4 Servings

Measure Ingredient
1 cup Small spiral pasta, or bow
\N \N Ties, or small shells
1 \N 15-oz can white beans,
\N \N Drained, rinsed, and drained
\N \N Well again
2 \N Prepared roasted red bell
\N \N Peppers, diced (see note)
¼ cup Low-fat mayonnaise
3 tablespoons Sun-dried tomato or basil
\N \N Pesto
1½ tablespoon White wine vinegar or lemon
\N \N Juice
⅛ teaspoon Salt
\N \N Freshly ground black pepper
\N \N To taste
\N \N Optional:
¼ cup Minced parsley

1. Bring a pan of water to the boil, add the pasta and cook according to package directions. Drain. 2. Combine the pasta with the beans and bell peppers. 3. Combine the mayonnaise, pesto, vinegar or lemon juice, salt and pepper. Stir into the salad. Stir in the parsley if using and serve. Note: Roasted red bell peppers can be purchased already prepared; major supermarkets often stock them with other condiments.
