Ranch potato casserole

6mediumsRed potatoes; up to 8
½cupSour cream
½cupPrepared ranch salad dressing
¼cupBacon bits or cooked & crumbled bacon
2tablespoonsMinced parsley
1cup(4 oz) cheddar cheese; shredded
½cupShredded cheddar cheese
¼cupMelted butter
2cupsLightly crushed corn flakes

Directions

TOPPING

Cook potatoes until tender. Quarter (leave skins on) and set aside. Combine sour cream, dressing, bacon, parsley, and 1 cup cheese. Place potatoes on greased 9 x 13 inch baking dish. Pour sour cream mixture over potatoes and gently toss. Top with ½ cup of cheese. Combine corn flakes and butter.

Sprinkle over casserole. Bake at 350 degrees for 40-45 minutes. 8 servings.
